Come on... it's crumble! How can you go wrong with a warm desert, full of apples and strawberries and blueberries?!
This is a very delicious and easy desert, that's perfect for Autumn.
I adapted the recipe from one of the yummy crumble recipes over at Joy of Baking.
If you've never been there, you MUST!
Recipe
For the topping you'll need: 1 cup all purpose flour, 1/2 cup light brown sugar, 1 tsp ground cinnamon, 1/8 tsp salt, 6 tbsp unsalted butter cut into pieces, 1/2 cup old fashioned rolled oats.
I pulse everything in the food processor for a few seconds. Just make sure to put the oats in last, so that it still has a bit of crunch.
For the filling you'll need: 4 to 5 apples (peeled and cut into small pieces), a handful of strawberries (cut in half), a handful of blueberries (note: if your berries are frozen just use them like that, you don't need to thaw them first), 1/2 cup light brown sugar, the juice of 1 to 2 oranges, 1 tbsp cornstarch, 1 1/2 tsp vanilla extract.
Mix all the ingredients in a small bowl and set aside.
Put the fruit mix on a casserole (or a deep dish pie plate) and cover with the topping. Bake in a 180ÂșC oven for 35 to 45 min, or until the topping is golden and crunchy and the juices from the fruit are bubbling outside.
That's it! Happy Autumn baking!
Love, R
