Easy Peasy Cinnamon Palmiers




























So your friends show up in the afternoon or in the evening for coffee and tea and you don't have anything sweet for them?
And you panic and end up buying some plain old cookies at the nearest supermarket? and it's just good, not great?

Not anymore. i have the perfect solution for you!
These cinnamon palmiers are an all time favorite at my house and they work every time.

Here's the recipe:

. 1 sheet puff pastry (i buy mine fresh, pre rolled. if you buy frozen, thaw it first)
. 2 to 3 tbsp sugar (i use brown sugar, but you can use others)
. 2 tbsp ground cinnamon
. 1 tsp ground ginger (optional)
. 1/2 tsp salt (i use fleur de sel)

In a cutting board, sprinkle half of the sugar and cinnamon, all the salt and mix everything together. In a small ball combine the rest of the sugar, cinnamon and ginger (if using). Put your puff pastry sheet on top of the board and flip your sheet in the mixture, on both sides, so it gets covered in the mixture. Get your rolling pin and roll your sheet, for the spices to stick. Put the spice mix on one side of the sheet and smooth it all over the top. Roll the sheet from both sides, until they both meet in the center. Cool your puff pastry log in the fridge for 30 minutes. Once it's cooled, cut it in 1 to 2 cm slices and put them in a baking tray lined with parchment paper. Bake for 10 minutes or until they're golden and crisp.
